I know most of you have fallen out of your chair to see a recipe on my blog. But yes it's true, I finally made up a recipe worth sharing. I came up with this because I wanted to make a meal that Sam would eat that had meat, veggies and pasta. I also am sick of tomato based pasta sauces so I wanted more of a creamy sauce. Anyway, this turned out very tasty and would make good leftovers too.
Creamy Chicken Pasta Recipe
-2 Cloves Garlic (Minced)
-1 Red Pepper
-1/2 cup frozen veggie (or any other veggie that you like)
-1/4 cup butter
-10 big leaves of basil (20 small leaves of basil)
-6 Table Spoons of Flour
-Salt and Pepper
-2 Cups of Chicken Broth
-1/2 cup Whole Milk (can use half-n-half, yogurt or sour cream)
-2 Cups of Chicken (I used rotisserie chicken because it's so much quicker and cheaper..only $5 at Costco)
-Bow Tie Pasta (I used about 3/4 of my box)
-1/4 cup parmesan cheese (grated if you have it)
-Cherry Tomatoes (cut into slices)
Instructions:
1. Start boiling water and then cook bow tie pasta.
2. At same time you are cooking the pasta, sauté your vegetables (all but the tomatoes) with minced garlic and 1/4 cup of butter. I used a red pepper and some frozen yellow squash as my veggies. But you could probably use whatever you like: peppers, onions, spinach (don't sauté), cauliflower. Sauté over medium heat until veggies are soft.
3. Once veggies are soft, add flour to mixture one tablespoon at a time. Mix well.
4. Next add 2 cups of chicken broth and 1/2 cup of whole milk to veggie mixture. Then stir in basil leaves cut small. Heat over medium heat for 5 minutes. Don't boil, but you want it to be warm.
5. Add salt and pepper to taste.
6. Cut rotisserie chicken and add to sauce mixture.
7. Drain cooked pasta and add to sauce mixture.
8. Add parmesan cheese and stir
9. Let pasta and sauce sit on low heat and sauce will thicken.
10. Add cherry tomatoes as garnish and serve.
